Improvements

• New instances now save 7 days of raw messages even in default settings. Existing instances are unaffected, and to switch one over set internal.redpanda.redpandaServiceConfig.topic.defaultTopicCleanupPolicy to delete. Note that seven days scales with message rate, roughly 40–55 GB for umh.messages at 700 msg/s, so check the sizing guide before running a high-throughput instance
